Chocolate Chip Scones
RECIPE
Servings 6 | Prep Time30 | Total Time cooking 18 minutes
INGREDIENTS
2 cups all-purpose flour
3 ½ tsp. baking powder
1/2 tsp fine salt (heaping)
¼ cup sugar
6 T. butter – COLD
¾ cup heavy cream
¼ tsp. vanilla
1 large egg
1/3 cup (rounded) semi sweet chocolate chips (I use Guittard brand (46%) in the gold bag )
DIRECTIONS
Pre-heat oven to 350 degrees
1. In large mixing bowl, combine flour, baking powder, salt, and sugar. Mix well. Cut in butter. Place in freezer for 20 min.
2. In a separate bowl, combine cream and vanilla with egg. Whisk completely.
3. Set aside 1/4 cup of the egg/cream mixture - to be added, as needed, once the dough is being made.
4. Stir chocolate chips into the flour mixture.
5. Combine the majority of the egg/cream wet mixture with the dry ingredients. Add some of the 1/4 cup extra liquid, as needed, to form a dough that you can work with. It should be slightly sticky.
7. Turn the dough onto a lightly floured surface and gently press dough down (about 1” thick) into rectangle. Fold the entire mass over itself, twice,. and form a rectangle again.
8. Using a very sharp knife, cut the dough into equal size square sizes and place each square on a parchment lined cookie sheet.
9. If you can, refrigerate the un-cooked scones for 15 minutes before baking.
10. Bake for 15 minutes on middle oven rack and then move to top rack of oven for 3 additional minutes, until tops are lightly brown.
