Daisy Lane Bakery Grain-Free Dairy-Free Spinach Rolls

INGREDIENTS
1 c. cassava flour
½ cup + 1 Tbsp. tapioca flour
2 Tbsp. almond flour
4 cups fresh spinach (equivalent to ½ cup cooked)
1 egg
1 ¼ tsp. sea salt
1/2 C warm water
1/2 C olive oil
DIRECTIONS
1. Preheat your oven to 350 degrees F
2 In a microwave safe dish, cook the spinach with about 2 tsp. of water for 2-3 minutes until wilted.
3. Carefully pour off most of the liquid and then puree the spinach.(You should end up with about ½ cup of pureed spinach.)
4. Combine the cassava, tapioca flour, almond flour, salt in a bowl and whisk together.
5. With a fork or whisk, mix the egg, water and oil, and pureed spinach together in a bowl. 6.Combine wet and dry ingredients; this will for a slightly sticky but very pliable dough.
7. Weigh and roll 40 gram size dough balls and place on parchment paper covered cookie sheet. You may want to coat your fingertips with a small small amount of tapioca flour to do this, but it is not necessary.
8. Roll the batter into 40 gm size balls and place on a parchment paper lined pan, leaving 1 inch between them.
9. Bake on upper middle rack for 30-35 minutes or until lightly brown on bottom and top.
10. Let cool completely before eating.
