Grain-Free Dairy-Free Turkish Pide
RECIPE
Yield: 1 loaves* | Prep Time 20 minutes | Total Time 1 hour
INGREDIENTS for the dough
250g Grain-Free Flour Mixture
3/4 teaspoon active dry yeast
1/2 teaspoon sugar
1/2 teaspoon salt
3/4 cups warm water (177 ml); Use purified (not tap) water.
Olive oil to grease the bowl for rising
INGREDIENTS for the topping
2 teaspoons white sesame seeds
1 1/2 teaspoon nigella seeds
1/2 teaspoon sea salt flakes

1 egg yolk mixed with 1 tablespoon olive oil
DIRECTIONS
1. Whisk flour, yeast, sugar and salt in a bowl and add the water; use a fork to thoroughly mix ingredients,
2. Lightly oil a medium bowl and place the dough into the bowl, turning the dough to lightly coat with oil. Cover and let the dough rest for 15 minutes.
4. Place a medium sized cookie sheet on the middle shelf of the oven and pre-heat oven to 450°F.
5. Place dough onto a piece of parchment paper and use your hands to shape and flatten the dough into a rectangle about 1/2 “ thick.
6. Cover with a damp cloth and let rest for 10 minutes.
7. Using your fingertips, gentle make dimples in the dough.
8. In a small bowl, whisk egg yolk and oil together; use this mixture to lightly brush the top of the prepared pide.
9. Combine sesame seeds, nigella seeds, and salt flakes and evenly sprinkle over the top of the pide.
10. Remove cookiie sheet from oven and carefully lift and place the parchment paper with the unbaked pide onto the hot sheet. Place back into the oven and bake for 9-10 minutes or until golden brown.
11. Let cook on a wire rack.
*You can easily double this recipe and cook both loaves at same time, side by side, each on their own piece of parchment paper. Five minutes into baking, rotate sheets around evenly lightly browned.
