Raspberry Lemon Yogurt Popsicles

RECIPE

Servings 10-12 popsicles| Prep Time 1 hour| Total Time Overnight freezing

INGREDIENTS for the lemon simple syrup

3 Tablespoons fresh squeezed lemon juice

6 Tablespoons of granulated sugar. ( for sweeter popsicles add 4 more tablespoons of sugar)

INGREDIENTS for the popsicles

8 oz. frozen unsweetened raspberries

2 1/2 cups whole milk plain greek yogurt

1 Tablespoon heavy cream

DIRECTIONS

  1. Make the lemon simple syrup ahead of time by dissolving the 6 Tablsepoons of sugar in the 3 Tablespoons of freshly squeezed lemon juice in a pot over medium heat and then allowing to cool completely before making the popsicles.

  2. Once the simple syrup is cooled, combine the frozen raspberries, yogurt, and simple syrup in a blender and blend for 2 minutes. Continue blending and scraping down sides of blender to incorporate everything. Re-blend for additional 2 minutes.

Pour into popsicle molds and freeze overnight.
